How to Make Thai Potato Soup Asian Cooking Recipe Cuisine
Thailand Potato Soup
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Some cuisines are considered South Asian, South East Asian dishes, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 4 Servings
2 tbsp olive oil
1 yellow onion, chopped
2 cloves garlic, chopped
20 oz potatoes, peeled and coarsely chopped
2 tbsp chopped fresh cilantro
2 tbsp chopped fresh flat-leaf parsley
4 fresh kaffir lime leaves
1 tbsp peeled and grated fresh ginger
1 small red chili, seeded and chopped
6 cups vegetable stock or water
salt and pepper
1 1/2 cups coconut milk
4 kaffir lime leaves for garnish
Directions:
In a large saucepan over medium heat, warm oil. Add onion and garlic and cook until onion softens. Add potatoes, cilantro, parsley, 4 lime leaves, ginger and chili and cook for 1 minute. Add stock and bring to a boil. Reduce heat to simmer, cover and cook until potatoes are tender. Remove lime leaves and discard.
Break up some of the potatoes with a masher. Season with salt and pepper. Add coconut milk and heat through. Serve warm and garnish with a lime leaf.
