Japan Teriyaki Noodle Stir Fry

This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.

Recipe makes for 4 Servings

8 oz Japanese soba noodles (or whole wheat linguine)

4 tbsp vegetable oil

1 lb boneless, skinless chicken breasts or extra firm tofu packed in water (cut in 1/2-inch strips or cubes)

1 red, orange or yellow bell pepper, cut into 1-in.strips

3 carrots, thinly sliced

1 small red onion, halved top to bottom and cut into thin half rings

3 green onions, green and white parts, sliced

1/4 tsp crushed red pepper flakes

2 tbsp soy sauce

4 tbsp teriyaki sauce

Directions:

Cook the noodles according to the package directions until they are al dente. Drain and toss them immediately in a large bowl with 1 tbsp oil.

While the noodles are cooking, heat 1 tbsp oil over medium-high heat in a wok or large skillet and add the chicken (or tofu)

Cook, tossing often, until chicken is no longer pink, about 3 minutes (or 5 minutes for the tofu). Add the chicken or tofu to the bowl with the noodles.

Add the remaining 2 tbsp oil to the skillet over medium-high heat and add the peppers, carrots, onions, green onions and red pepper flakes, Cook, stirring frequently, until the vegetables are crisp-tender for about 3 minutes.

Add the noodles, chicken, soy sauce and teriyaki sauce to the pan and toss together for 1 minute.
