How to Make Cambodian Caramelized Chicken Wings with Ginger Asian Cooking Recipe Cuisine
Cambodia Ginger Caramelized Chicken Wings
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 2-4 Servings
5 tbsp sugar
2 tbsp peanut oil
1 oz fresh ginger, peeled and finely shredded or grated
12 chicken wings, splits in two
mixed pickled vegetables
Directions:
Gently heat sugar with 4 tbsp water in a small, heavy pan until it turns golden. Set aside.
Heat oil in a wok or heavy pan. Add the ginger and stir-fry until fragrant. Add the chicken wings and toss them around the wok to brown.
Pour in the caramel sauce and make sure the chicken wings are coated in it. Reduce the heat, cover the wok or pan and heat for 30 minutes, until tender and the sauce is caramelized.
Drizzle chili oil over the wings and serve from the wok with the pickles.
