How to Make Thai Sesame Noodles Asian Cooking Recipe Cuisine

Thailand Sesame Noodles


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.


Recipe makes for 4-6 Servings

2 boneless chicken breasts, cut into strips

12 oz dried wheat noodles

3-4 tsp sesame seeds

vegetable oil

1-inch fresh ginger, grated or finely-chopped

3 cloves garlic, minced

1 red bell pepper

5-8 mushrooms

1-2 green onions

handful fresh basil

lime wedges

MARINADE:

3 tbsp soy sauce

2 tbsp sesame oil

1 tbsp rice vinegar

3/4 tsp sugar

SAUCE:

1/4 cup freshly-squeezed lime juice

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp fish sauce

1/2 tsp shrimp paste

2-3 tsp sugar, to taste

1 fresh red chili, minced or 1/2 tsp dried crushed chili flakes

Directions:


Stir together the marinade ingredients and pour over chicken strips in a bowl. Allow to marinate in the refrigerator while preparing other ingredients.

Stir together all sauce ingredients with a fork or whisk in a small bowl until shrimp paste and sugar dissolve; set aside.

Boil noodles until ‘al dente’. Rinse thoroughly with cold water to keep from sticking and set aside.

Place sesame seeds in a dry frying pan over medium heat. Stir until seeds turn light golden brown. Transfer to a bowl to cool.

Heat a wok or large frying pan over medium heat and drizzle 1-2 tbsp oil into a pan. Add the ginger and garlic. Stir-fry for 1 minute, then add the chicken including the marinade. Stir-fry for 3 minutes or until chicken is cooked through.

Add the red pepper and mushrooms, stir-fry for 1 minute until mushrooms are cooked.

Add noodles then pour in the sauce. Stir-fry for another 1 minute using a tossing motion.

Remove from heat, sprinkle two-thirds of the toasted sesame seeds on the noodles and toss again, seasoning with salt and spice. 

Put noodles on individual serving plates, adding a final sprinkling of sesame seeds to each portion. Top with greens of green onion, fresh basil and lime wedges.
