How to Make Vietnamese Stir-Fried Rice with Chinese Sausage Asian Cooking Recipe Cuisine

Vietnam Stir-Fried Rice with Chinese Sausage


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 oz dried cloud ear mushrooms, soaked for 20 minutes

1 tbsp sesame oil

1 onion, sliced

2 green or red Thai chilies, seeded and finely chopped

2 Chinese sausages, 6-inch long, each sliced into 10 pieces

6 oz shrimps, shelled and deveined

2 tbsp fish sauce, plus extra for drizzling

2 tsp five spice powder

1 bunch fresh cilantro, stalks removed, leaves finely chopped

4 cups cold steamed rice

ground black pepper


Directions:


Drain the soaked cloud ear mushrooms and cut them into strips. Heat a wok or heavy pan and add the oil. Add the onions and chilies. Fry until they begin to color, then stir in the mushrooms.

Add the sausage slices, moving them around the wok or pan until they begin to brown. Add the shrimps and move them around until they turn opaque. Stir in the fish sauce, the five-spice powder and 2 tbsp of the cilantro.

Season well with pepper, then quickly add the rice, making sure it doesn't stick to the pan. As soon as the rice is heated through, sprinkle with the remainder of the cilantro and serve with fish sauce.



*This is a perfect recipe for rice that is leftover from a day or two before.
