How to Make Korean Spicy Tofu Stew Asian Cooking Recipe Cuisine

Korea Spicy Tofu Stew 


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 tbsp high-heat oil

3 cloves garlic, finely minced

1/2 lb very thinly sliced beef

4 cups vegetable, beef, pork or chicken stock

4-8 fresh shiitake mushrooms

2-3 tbsp Korean chili flakes

1 tbsp soy sauce

one 18-oz block of silken tofu, cut into large cubes

4 eggs

1 tsp sesame oil

2 spring onions, sliced on the diagonal into 2-inch lengths


Directions:


Set a pot over medium-high heat. When hot, add the cooking oil and swirl to coat. Add the garlic and fry until fragrant, about 30 seconds.

Add the beef slices and fry for 1 minute until browned. Pour in the stock, add the shiitake mushrooms, chili flakes and soy sauce. Turn the heat to high and bring to a boil.

Carefully add the tofu and return the stew to a rolling boil. Taste the stew and add additional chili flakes or soy sauce if needed. Crack the eggs into the pot and let the eggs cook until the egg whites are white but the yolk still runny.


Turn off the heat, drizzle with sesame oil and finish with the sliced spring onions. Serve in bowls on top of rice.
