How to Make Korean Semi-Dried Radish Chips - Mu Mallaengi Chorim Asian Cooking Recipe Cuisine

Korea Mu Mallaengi Chorim (Semi-Dried Radish Chips)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



6 lb semi-dried radish strips

2 lb semi-dried chili leaves

1/2 lb semi-dried radish stems

8 fl oz light soy sauce

1 oz sugar

3 oz chopped garlic

2 oz chopped ginger

1 oz red hot chili flakes

2 oz red chili powder

4 oz spring onions, cut into 2-inch lengths

1 oz red dry chili threads


1 oz toasted sesame seeds


Directions:


Rinse the radish strips, chili leaves and radish stems quickly so that they do not absorb water. Squeeze out the excess moisture gently. Mix the vegetables together. Soak them in soy sauce and sugar overnight. Weight down with a plate.

To make the seasoning, combine the garlic, ginger, chili flakes and powder. Toss this with the vegetables, spring onions, chili threads and sesame seeds.

Transfer everything to a container and allow to sit in a  cool, dark place to ferment. This pickle can be kept for many months. If you wish to eat immediately, sprinkle the pickle with sesame oil and a little sugar or vinegar.


*These pickles are more sides than anything and last for quite a while, this has no specific servings.
