How to Make Vietnamese Southern-Spiced Chili Rice Asian Cooking Recipe Cuisine

Vietnam Southern-Spiced Chili Rice


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

1 tbsp vegetable oil

2-3 green or red Thai chilies. seeded and finely chopped

2 garlic cloves, finely chopped

1-inch fresh ginger, chopped

1 tsp sugar

2-3 tsp ground turmeric

1 cup long grain rice

2 tbsp fish sauce

2 1/2 cups water or stock

1 bunch of fresh cilantro, stalks removed, leaves finely chopped

salt and pepper


Directions:


Heat the oil in a heavy pan. Stir in the chilies, garlic and ginger with the sugar. As the begin to color, stir in the turmeric. Add the rice, coating it well, then pour in the fish sauce and the water or stock - the liquid should sit about 1 inch above the rice.

Season with salt and ground black pepper and bring the liquid to a boil. Reduce the heat, cover and simmer for about 25 minutes or until the water has been absorbed.  Remove from the heat and leave the rice to steam for a further 10 minutes. 


Tip the rice on to a serving dish. Add some of the cilantro and lightly toss together using a fork. Garnish with the remaining cilantro.
