Malaysia Chicken Skewers with Honey and Turmeric

This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.

Recipe makes for 4 Servings

1 tsp grated fresh ginger

1 tbsp honey

1 tbsp soy sauce

1/4 tsp turmeric powder

1/2 tsp ASian chili powder or cayenne powder

1 tbsp freshly squeezed orange juice

1 lb boneless chicken breast or thigh meat, cut into 1-inch cubes

6 spring onions, bottom 6-inch only

12 skewers

Directions:

In a large bowl, whisk together the ginger, honey, soy sauce, turmeric powder, Asian chili powder and orange juice. Add the chicken and mix well to coat. Marinate in the refrigerator 30 minutes to overnight.

Twenty minutes prior to cooking, set the chicken at room temperature to take off the chill.

Cut the spring onion bottoms into 1 1/2-inch lengths. Skewer the chicken and spring onion pieces, alternating each.

Preheat the grill to medium-high heat. If possible, leave one section of your grill on low heat. Grill on medium-high heat, 2 minutes each side and then move the skewers to the low heat to finish cooking, covered for another 2 minutes. Watch the skewers as the sugars in the honey and orange juice may caramelize fast.
