How to Make South East Asian Slaw with Chicken Asian Cooking Recipe Cuisine

South East Asia Slaw with Chicken


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4 Servings

3/4 lb chicken breasts

salt

freshly ground pepper

1/2 head small white cabbage

1 carrot

1 red Fresno chile pepper

4 spring onions

2 tsp sugar

2 tsp fish sauce

1 tbsp soy sauce

3 tbsp lime juice

1 tbsp rice vinegar

1/2 cup fresh cilantro sprigs

1/4 cup fresh mint sprigs


Directions:


Place chicken in a pot and cover with water. Add salt and pepper and bring to a boil. Cover chicken and cook over low heat for about 10 minutes. Let cool in the liquid.

Remove any wilted leaves from cabbage, rinse, halve, core and cut into very fine strips. Peel carrot and slice lengthwise thinly, then into shorter strips. Rinse chile, discard stem, and chop rest finely. Remove root ends and any wilted parts from spring onions, rinse, cut into 1 1/2-inch lengths, then into narrower strips.

Combine cabbage, carrot strips, chile, spring onion strips, salt and sugar and toss together. Let vegetables stand at room temperature for about 15 minutes.


Mix fish sauce, soy sauce, lime juice and rice vinegar. Rinse herbs, shake dry, remove tough stems and chop rest coarsely. Drain chicken and shred into bite-size sections. Combine vegetable mixture, chicken, sauce and herbs. Salt to taste.
