How to Make Chinese Winter Melon Puree Soup Asian Cooking Recipe Cuisine
China Winter Melon Puree Soup
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
1 tbsp oil
2 thin slices ginger
6 oz winter melon, peeled and diced into 1/4-inch cubes
20 fl. oz. chicken stock
salt and white pepper to taste
slaked potato starch
sesame oil
Directions:
In a wok or stainless steel pan, add 1 tbsp oil and gently fry the ginger until lightly golden.
Add the winter melon and cook for 1 minute. Add the chicken stock and bring to a fast simmer, skimming to remove any impurities and oil.
Simmer until the winter melon is just cooked. Remove the ginger and then puree the mixture using a hand blender.
Pass through a chinois into a clean pan, taste and correct seasoning. If too watery, thicken with potato starch.
Add a few drops of sesame oil just before serving.
