How to Make Korean Stuffed Crab Shell Kimchee Asian Cooking Recipe Cuisine
Korea Stuffed Crab Shell Kimchee
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 12-15 Servings
12-15 large fresh crab
5 oz coarse sea salt
1 Napa cabbage, about 2 lb cut into 1 1/2 inch pieces
1 radish, about 1 lb, julienned
1/3 cup crushed garlic
1/4 cup crushed fresh ginger
3 oz red hot chili powder
1 oz red hot chili flakes
1/2 cup fish sauce
4 spring onions cut into 2-inch lengths
1/2 cup Korean watercress, cut into 2-inch lengths
Directions:
Rinse the crabs well, pull off the top shells and reserve. Remove the rose and set aside. Crack open the crab legs, remove the meat. Mix the roe and meat together with 2 oz salt. Blanch the top shells briefly in boiling water until the shells turn red, then dry thoroughly.
Toss the cabbage and radish with 3 oz salt and allow to stand.
To make the stuffing, mix together the garlic, ginger, chili powder and flakes and fish sauce. Add the spring onions and watercress and toss together. Add the cabbage and radish and mix well.
Stuff the crab shells generously. Pile them neatly in a container with the stuffing facing up. Cover with several cabbage leaves and allow to ferment for 2-3 days. Serve the kimchee in the crab shells.
