China Winter Melon and Shiitake Mushroom Soup
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4 Servings
20 fl oz chicken stock
6 oz winter melon, peeled and diced
2 thin slices ginger
2 oz shiitake mushrooms, diced
salt and ground white pepper to taste
sesame oil
Directions:
Place the chicken stock, diced winter melon and ginger into a wok or stainless steel pan. Bring to a low simmer and skim off any impurities.
Simmer for 5 minutes until the melon is just beginning to soften, then add the diced shiitake mushrooms. Bring back up to a simmer and cook for a further minute.
Remove the ginger and season to taste with the salt and white pepper.
Add a dash of sesame oil to the bottom of the serving bowl and carefully ladle over the soup.
