How to Make Japanese Vegetable Tempura Patties Asian Cooking Recipe Cuisine
Japan Vegetable Tempura Patties
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. Recipe makes for 4 Servings
1 small zucchini, grated
1 small potato, julienned
1/2 carrot, julienned
1/2 onion, thinly sliced
3.5 oz grated sweet potato
4 spring onions, green part included, cut into 3/4-inch lengths
4 nori sheets, shredded
2 cups tempura flour, sifted
2 cups chilled soda water
oil, for deep frying
2 tbsp shredded pickled ginger
WASABI MAYO:
1/2 cup mayonnaise
2 tsp wasabi paste
1 tsp japanese soy sauce
1 tsp sake
Directions:
Combine the mayo ingredients in a small bowl. Set aside until ready to serve.
To make the patties, put the zucchini, potato, carrot, onion, sweet potato, spring onion and nori in a bowl. Toss together.
Sift the tempura flour into a large bowl and make a well in the centre. Add the soda water and loosely mix together with chopsticks or a fork until just combined and still a bit lumpy. Add the vegetables and quickly fold through until just combined.
Fill a wok one-third full of oil and heat to 350F. Gently drop 1/4 cup of the mixture into the oil, making sure that the patty is not too compact and cook for 1-2 minutes or until golden and crisp.
Drain on paper towels and season with while still warm. Repeat with remaining mixtures to make 11 more patties. Serve hot.
