How to Make Thai Sweet Pork - Moo Wan Asian Cooking Recipe Cuisine

Thailand Moo Wan (Sweet Pork)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 4-6 Servings

1 3/4 lb pork spareribs

1/2 cup brown sugar or grated palm sugar

4 red Asian shallots, sliced

1 tbsp fish sauce

1 tbsp kecap manis

1/2 tsp ground white pepper

fresh cilantro leaves, to garnish

Directions:


Remove the bone and outer rind from the ribs. Cut into 1/2 inch slices.

Put the sugar in a wok with 2 tbsp water and stir over low heat until sugar has dissolved. Increase the heat and boil, without stirring, for 5 minutes or until the sugar turns evenly golden. 

Stir int he pork and shallots. Add the fish sauce, kecap manis, pepper and 1 cup warm water. Stir until all the sugar has melted.


Cover and cook for 10 minutes, stirring occasionally, then cook, uncovered, stirring often for 20-30 minutes or until the sauce is sticky and the meat is cooked. Garnish with cilantro and serve with rice.
