How to Make Thai Warm Lamb Salad Asian Cooking Recipe Cuisine
Thailand Warm Lamb Salad
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe makes for 4-6 Servings
2 tbsp Thai red curry paste
3 tbsp chopped fresh cilantro leaves
1 tbsp finely grated fresh ginger
3-4 tbsp peanut oil
1 1/2 lb lamb loin fillets, thinly sliced across the grain
6 1/2 oz snow peas
1 1/4 lb fresh thick rice noodles
1 red pepper, thinly sliced
1 cucumber, thinly sliced
6 spring onions, thinly sliced
DRESSING:
1 1/2 tbsp peanut oil
1/4 cup lime juice
2 tbsp brown sugar
3 tsp fish sauce
3 tsp soy sauce
4 tbsp fresh mint leaves
1 clove garlic, crushed
Directions:
Combine the curry paste, cilantro, ginger and 2 tbsp oil in a bowl. Add the lamb and coat well. Cover with plastic wrap and marinate in the refrigerator for 2-3 hours.
Steam or boil the snow peas until just tender, then refresh under cold water. Drain.
Cover the noodles with boiling water. Drain immediately and gently separate the noodles with your fingers.
To make the dressing, put all the ingredients in a screw top jar and shake well.
Heat a wok over high heat, add 1 tbsp of the oil and swirl to coat the side of the wok. Add half the lamb and stir fry for 5 minutes or until tender. Repeat with the remaining lamb, using more oil if needed.
Place the lamb, snow peas, noodles, pepper, cucumber and spring onion in a large bowl, drizzle with the dressing and toss to combine.
