How to Make Indian Kofta Curry Asian Cooking Recipe Cuisine

India Kofta Curry


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 6 Servings

MEATBALLS:

1 1/2 lb minced lamb

1 large onion, finely chopped

1 clove garlic, crushed

1 1/2 tsp salt

1 tsp finely grated ginger

1 fresh red or green chili, seeded and finely chopped

3 tbsp finely chopped mint or cilantro

1 tsp Garam Masala

GRAVY:

3 tbsp ghee or oil

2 medium-sized onions, finely chopped

2 cloves garlic, finely chopped

1 tbsp finely chopped fresh ginger

1 tsp ground turmeric

1 tsp Garam Masala

1 tsp chili powder or to taste

2 large ripe tomatoes, peeled and finely chopped

1 tsp salt

2 tbsp chopped cilantro or mint

lemon juice to taste


Directions:


To make the meatballs, mix the lamb thoroughly with all the other ingredients. Shape into small bowls.

To make the gravy, heat the ghee or oil in a large, heavy saucepan. Brown the meatballs, remove from the pan and set aside. In the same pan, fry the onions, garlic and ginger until soft and golden. 


Add the turmeric, garam masala and chili powder. Fry for 1 minute. Add tomatoes, salt and meatballs, cover and simmer for 25 minutes or until gravy is thick. Stir in the chopped herbs and lemon juice.
