Vietnam Banh Cuon (Rice Rolls Stuffed with Pork)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.



Recipe makes for 6 Servings

1 oz dried cloud ear mushrooms, soaked in warm water for 30 minutes.

12 oz ground pork

2 tbsp fish sauce

2 tsp sugar

1 tbsp peanut oil

2 garlic cloves, finely chopped

2 shallots, finely chopped

2 spring onions, trimmed and finely chopped

24 fresh rice sheets, 3-inch squares

ground black pepper

spring onion oil

nuoc cham, for dipping


Directions:


Drain the mushrooms and squeeze out any excess water. Cut off and discard the hard stems. Finely chop the rest of the mushrooms and put them in a bowl. Add the ground pork, fish sauce and sugar and mix well.

Heat the oil in a wok or heavy pan. Add the garlic, shallots and onions. Stir-fry until golden. Add the pork mixture and stir-fry for 5-6 minutes, until pork is cooked. Season with pepper.

Place the rice sheets on a flat surface. Spoon a tablespoon of the pork mixture onto the middle of each sheet. Fold one side over the filling, tuck in the sides, and roll to enclose the filing, so that it resembles a short spring roll.


Place the filled rice rolls on a serving plate, drizzle with spring onion oil, and serve with nuoc cham or any other chili or tangy sauce of your choice, for dipping.
