How to Make Indian Tandoori Vegetables Asian Cooking Recipe Cuisine
India Tandoori Vegetables
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. In this blog we touch on recipes that may be predominant for the Chinese Cuisines. We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam. Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.
Recipe makes for 4 Servings
1 lb broccoli, cut into bite-size pieces
1 lb cauliflower, cut into bite-size pieces
12 skewers
MARINADE:
1 tsp cumin seeds, toasted
1 tsp coriander seeds, toasted
1/2 tsp peeled and coarsely chopped fresh ginger
1 tbsp coarsely chopped garlic
1/2 tsp ground turmeric
1/2 tsp cayenne or paprika
1/2 tsp black pepper
1/4 cup plus 2 tbsp plain yogurt
salt to taste
BASTING SAUCE:
1/2 tsp ground red pepper or 1 tsp paprika
3 tbsp neutral-flavored vegetable oil
Directions:
To make the marinade, grind the toasted spices into a powder. Add the ginger and garlic and crush to a paste.
In a large bowl, add the paste and the rest of the marinade ingredients. Whisk the yogurt mixture until smooth.
Add the broccoli and cauliflower to the bowl with marinade and toss to evenly coat. Let marinate for 30 minutes. Remove from the marinade and thread alternating one broccoli and one cauliflower onto the bamboo skewers.
In a small bowl, add the ingredients for the basting sauce. Prepare the grill with a medium heat.
Just before grilling, oil the hot grate. Place the skewers not eh grate over the heat and grill for about 10 to 12 minutes or until done. Baste regularly with the spiced oil.
*If you are using bamboo skewers, remember to soak them in water for 30 minutes before grilling.
