How to Make Malaysian Otak Otak Asian Cooking Recipe Cuisine

Malaysia, Indonesia Otak Otak (Fish Cakes in Banana Leaves)


This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients.  It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients.  The style of cooking may have a slight alteration while still maintaining the dish's overall purpose.  In this blog we touch on recipes that may be predominant for the Chinese Cuisines.  We will also share recipes based upon country, or regions such as: Burma, Cambodia, Indian, Indonesia, Japan, Korea, Laos, Malaysia, Nepal, Philippines, Singapore, Sri Lanka, Taiwan, Thailand, Tibet and Vietnam.  Some cuisines are considered South Asian, South East Asian, Central Asian and/or Middle Eastern and may not be strictly connected to a specific country or culture.

Recipe Makes for 3-4 Servings:

14 oz boneless white fish fillets

3 tbsp spice paste like laksa lemak

3 tbsp coconut milk

1 egg, beaten

1 red chili, seeded and sliced

finely grated zest of 1 lime

banana leaves

Directions:

Slice fish fillets and put into a food processor. Mix together the laksa paste, coconut milk and egg. Process until the fish is finely chopped, adding the other ingredients through the feed tube until a well-combined mass forms. Transfer the mixture to a bowl and mix in the chili and lime zest.

Wash the banana leaf and use a sharp knife to remove the thick center rib. Cut the leaf into rectangles large enough to enclose a generous tablespoon of the fish paste. 

Put heaped tablespoons of the mixture in the middle of the banana leaf. Fold the leaf over to completely enclose it and flatted to less than 1/2-inch thick.

Fasten the ends with toothpicks. When the parcels are all made, cook over a barbecue or under a griller until the mixture is cooked through, about 6 minutes on each side.

Serve in the wrapping, which is removed before eating.


*To prevent the banana leaf from splitting when folding, pass over a gas flame or put under and electric grill until it becomes pliable. If you can't find banana leaves, you can use a double layer of aluminum foil, shiny side in, but it won't be the same.
