India Tomato Salad with Ginger
This recipe was taken from centuries old cooking techniques and when possible applied modern cooking methods and/or ingredients. It uses Asian cooking styles, Asian Spices, Asian Sauces and Asian Ingredients. The style of cooking may have a slight alteration while still maintaining the dish's overall purpose. Recipe Makes for 4 Servings:
3 large or 4 medium tomatoes
Salt and black pepper to taste
1 tablespoon peeled and minced fresh ginger
1 small fresh chile, like Thai or jalapeƱo, stemmed, seeded, and minced, or to taste
3 tablespoons fresh lime juice, or to taste
Chopped fresh cilantro leaves for garnish
Directions:
Core the tomatoes, then slice them. Arrange them on a plate and sprinkle with salt and pepper; let sit for about 10 minutes.
Meanwhile, combine the ginger with some more salt and pepper, the chile, and about 3 tablespoons lime juice.
Drain any liquid that has accumulated around the tomatoes, then dress with the ginger-lime mixture. Taste and add more lime juice if necessary, then garnish and serve.
